Grilled Veggie Salad Recipe


I’m curious, are you the type of person who forgets to eat too? I have a terrible habit of doing that. Eating isn’t something I think about until I feel hungry pains or am shaking like a leaf.

Surely, I’m not the only person with this dreadful habit?

If I am intently working on something I’m completely oblivious to time.  Minutes and hours keep ticking by until early evening comes. Before I know it, an entire day passed and the only thing I have consumed is water and coffee.

Isn’t coffee the breakfast of champions? At least the water should count for something.

I’ve had more than a few wrestling matches with the floor. It jumps right up and attacks. Okay, just a little dramatic there. I’m the one who attacks the floor when I pass out.

That’s always fun! No, not really. It’s not fun at all. Truth be told, it’s quite embarrassing when it happens in a public place. 

It’s best to keep easy to grab foods on hand.

This grilled veggie salad recipe is easy to make too.

A delicious Grilled Veggie Salad and homemade vinaigrette dressing for summer days when it's to warm to kick the stove on.  Garden fresh zucchini, sweet orange bell peppers, fresh corn and Aidells mango jalapeño sausage give it a sweet and spicy kick.

I still think coffee should be considered a meal replacement. Just saying. How hard can it be for coffee makers to add some protein to the beans? That’s a marketable idea. Ha!


On the spur of the moment, I decided to whip up a summer veggie salad and share it with you. Hmm. Is it supposed to be said- “IN the spur of the moment”?

Veggie salad recipe

Grilled Veggie Salad Recipe:

5 zucchini

1 yellow onion

1 yellow bell pepper

1 orange bell pepper

5-6 cloves garlic

2 ears of corn

Slice them as shown in the photo

Place on an outdoor grill or a Foreman grill like I did

Remove once soft and you can see grill marks

Grill marks make everything prettier and we all know presentation goes a long way.

Let the veggies cool, lest you burn the heck out of your fingers like I did.

Cut all veggies in a nice bite size chunk. Add dressing to taste.


Zucchini salad recipe

Chop cooled veggies


Dressing recipe:

6 oz olive oil

4 oz red wine vinegar

5 cloves garlic-minced

½ tsp lemon pepper- grated lemon zest and black pepper

1 tbsp. Frenchs Chardonnay Dijon Mustard

1-2 pinches of sweetener to cut the tart vinegar- I used regular white sugar

salt/pepper to taste

Whisk or shake the heck out the homemade dressing in a shaker bottle.

*optional add-ons- Aidells mango | jalapeno sausage, garnish with minced parsley, chives, basil or cilantro.

I make my own salad dressings since so many bottled dressings have sketchy ingredients that will make me sick. If you’re short on time, I think Ranch dressing or Honey Mustard would  taste great with the vegetable salad!

 This salad will hold for a day or so before it starts looking funny.

This recipe is slightly sweet, with mild spice from the sausage.

I’m not usually fond of sweet food unless it’s dessert, but I didn’t mind the mild sweetness in this grilled veggie salad.

No, Olivia, my sister, you are not the only one that forgets to eat… even when I bring food with me to work, I still forget. When I was dieting and needing to eat 5+ times a day, I had to set alarms on my phone for every time I was supposed to eat… which I think I am going to have to do again… seeing as how my waist is NOT where I want it to be at the moment.
